Charlie, born in Brooklyn, raised in Queens and Shannon, Virginia born and raised, both grew up with families running a restaurant. With their passion for cooking and serving others topped with their love for New York bagels, we decided to bring a piece of New York to our community in hopes others would share the love of not having to travel so far to purchase the coveted, yet hard to obtain, New York bagel.
Realizing a New York bagel is not just your average bagel, we began to formulate what was needed to meet the criteria to deliver with New York standards. After numerous failed attempts with so many recipes combined with yeast, flour and water, why was it so difficult to recreate the bagel that was desired by so many? Months of research and dozens of flat batches of bagels later, we learned of a company that would solve our bagel blues.
New York Watermaker, a company who created a water filtration system that is specifically designed to replicate was the answer to our question! Because of this filtration system, the hard impurities found in our city's water are replaced and filtered in with the minerals and freshness of New York Water as if you were receiving it straight from the Catskill Mountains as New York water is. This water system provides us with the baking capabilities needed to produce our above average 7 ounce bagels and assists in the baking process with delivering a mouth watering, oversized bagel with the dense middle and outer soft crunch just like a bagel straight out of a Brooklyn bakery!
Our bagels are hand rolled daily and baked in our state of the art bagel oven. Our sandwiches, all named after Brooklyn neighborhoods are stuffed with pastrami, Taylor Ham and Lox to name a few. Our cream cheeses are made fresh daily and we carefully select a specialty cream cheese each week for the public to enjoy. Our pastries and famous New York crumb cake are ordered from New York each week and our knishes...served hot from the grill with a side of brown mustard...FUHGEDDABOUDIT!
